Summer Butter Bean Mint Salad

Half days at school are in full swing and that can only mean one thing-Summer is officially here! This time of year makes me crave the summer foods I have missed since last season. One of my favorite summer side dishes is this butter bean mint salad. The fresh flavors will send your taste buds on a joy ride!

  1. Boil butter beans in seasoned water until they are tender.
  2. Fry the pancetta.
  3. Chop the onion.
  4. Stir the above and remaining ingredients together.
  5. Enjoy!
  • 6 to 7 cups of butter beans
  • 4 ounces Pancetta
  • 1/2 cup mint
  • 3/4 cup red onions
  • 1/2 cup shaved Pecorino cheese
  • 2 tablespoons olive oil
  • 1 1/2 tablespoons lemon juice
  • 1 red chili pepper, minced
  • Salt and pepper to taste
