Superbowl French Feta Dip

I know it's a bit cliché to serve dips for the Superbowl, but this year I wanted to serve a more sophisticated dip. Is that an oxymoron? Is there really such a thing as a fancy dip? I think I might have one for you! It is no secret that I have a new found love affair with the Valbreso French Feta. My dear friend Krysten Hariri introduced me to this staple this summer. So, why not incorporate the Feta into a fancy dip and use veggies instead of crackers or chips? I have noticed that my children gobble up dips regardless of what they're using! If using veggies is a way to get them to eat more healthy, then I am all about it. Not to mention, this is an easy way to coax my husband to munch on vegtables while drinking beer and watching the game. Now, if you didn't grow up on a salt lick like I did, this dip may be a little salty. However, an easy fix is to back off on the cheese from 8 ounces to 5 ounces. This may be a more pleasing option for your taste buds!

  • 2 tablespoons extra virgin olive oil
  • 1/2 cup pine nuts, divided, 1/4 cup for dip and 1/4 cup for topping
  • 8 ounces Valbreso French Feta
  • 1/4 cup heavy cream
  • 1 cup sour cream
  • 1/3 cup fresh dill
  • 2 garlic cloves
  • 1/2 teaspoon freshly grated lemon zest
  • 1 tablespoon lemon juice
Put all of the ingredients into a food processor and pulse until combined and smooth. Garnish with remaining 1/4 toasted pine nuts

Serve with a crudité platter

  • Cherry tomatoes
