Lemon Zest Shrimp Salad

This is a recipe from our Hot Little Biscuit eateries. We were trying to get creative about how to use any leftover shrimp after our Thursday shrimp and grits special. The lemon zest shrimp salad became a huge hit as a new summer special! We use local shrimp from Tarvin Seafood who runs the Miss Paula shrimp boat our of Shem Creek. After we put shrimp salad on a buttermilk biscuit, there was no turning back. 

Lemon Zest Shrimp Salad

You'll Need:

    - 4 cups chopped cooked shrimp - 3 celery stalks, diced - Zest and juice of ½ lemon - ½ cup mayonnaise - 2 green onions, diced - 2 tablespoons fresh dill, chopped - Salt and pepper to taste

How To:

    1. Cut each shrimp into thirds and place in a large bowl. 1. To the shrimp, add the celery, lemon zest and juice, mayonnaise, green onions, dill, salt and pepper. Stir until everything is well combined. 1. Cover and let chill in the refrigerator for at least 30 minutes. 1. Serve and Enjoy!
