Butter Bean Hummus

This recipe always reminds me of a funny story. A few years ago, I was catering a dinner party and I made this tasty butter bean hummus. The theme for the meal was the Mediterranean. The event was at the Cigar Factory in August... aka hot as all get out! I was dressed nicely and in high heels ready to cater to a fabulous party. I made a beautiful spread for my hummus three-way dish - classic, boiled peanut, and butter bean hummus with a plethora of accoutrements. On my way up the stairs, I tripped and fell. Hummus ended up all over me and my silk dress!
Needless to say, I'll never forget that! As embarrassing as it may have been, I recovered and still make this dish often. This recipe is great for hot summer nights. The butter beans add a Southern flair to homemade hummus!
Butter Bean Hummus
- - 2 cups of soft boiled butter beans (Reserve the cooking liquid)
- 3 cloves garlic
- 1 ½ tablespoon cumin
- ½ teaspoon cayenne
- ½ teaspoon paprika
- 3 chopped green onions
- Juice from 1 lemon
- ¼ cup cilantro
- ¼ cup mint
- Salt and pepper to taste
- 2 tablespoons finely minced red onion, for garnish
- 2 tablespoons olive oil, for garnish
- 1 teaspoon fresh dill, chopped for garnish
- 1. In a saucepan over medium heat add the butter beans and just enough water to cover them. Let simmer for 30 minutes. Once tender, remove from heat and strain the liquid from the beans, reserving the strained liquid.
1. Add the garlic, cumin, cayenne, paprika, green onions, lemon juice, cilantro and mint to a food processor. Pulse until combined.
1. Add the butter beans (reserving ¼ cup for garnish) to the food processor and pulse to combine. Slowly add the reserved butter bean liquid until desired consistency is reached. Add salt and pepper to taste.
1. Scoop the hummus into a serving bowl. Garnish with remaining ¼ cup butter beans, red onions, olive oil and fresh dill. Serve and Enjoy!
