Currant Almond Rice

Don't we all get tired of having plain rice as a side dish? I know I do! My family eats a ton of rice. Honestly, a lot more than potatoes. So in an attempt to spice up a meal staple, I came up with this dish. I always have almonds and currants in my pantry to dress things up so why not try it with our rice. It was delicious! This currant almond rice can be ready in 30 minutes and was absolutely perfect with my Jamaican Jerk Chicken. 

Currant Almond Rice

You'll Need:

    - 2 cups basmati rice - 3 cups chicken or vegetable broth or water - 1 cup currants - ½ cup toasted slivered almonds - 3 tablespoons salted butter - Salt and pepper to taste

How To:

    1. In a saucepan add the broth or water and bring it to a boil. 1. Add the rice and stir. Cover and reduce the heat to a simmer for twenty minutes or until the liquid is absorbed and the rice is tender. 1. Once the rice is cooked, scoop it into a large mixing bowl and toss with the currants, toasted almonds and butter. Add salt and pepper to taste. 1. Serve immediately and Enjoy!
