Now that we are all stuck at home, I am thinking about food even more than ever! One of my only outings these days is the grocery store. Last grocery run, I restocked our produce and decided to put a spin on our daily salad.

We eat a salad almost every night with supper. This is a fresh take on the traditional salad with flavor-packed additions. I like to pair this creative zucchini salad with Greek inspired meat and transport ourselves to the Mediterranean!

Zucchini Salad


    - 3 large zucchinis - 8 ounces crumbled feta - 3 green onions, diced - 1 cup toasted pine nuts - ½ cup red or green Serrano chili pepper, minced finely - ½ cup fresh mint, chopped - ¼ cup olive oil - Juice of ½ a lemon - Salt and Pepper to taste

How To

    1. Trim the ends of the zucchini. With a vegetable peeler, shave lengthwise into long wide strips. When you get to the center of the zucchini, turn over and slice until you get to the center again. 1. Toss everything into a large bowl and serve immediately. Enjoy!
