What is a Biscuit Cracker?
I have always loved artisan crackers. Whenever I am in a specialty grocery store I like to try a new one with great packaging. The crunch, the salt, the baked in flavors... you can never go wrong with an amazing artisan cracker. When I first opened our Callie's Hot Little Biscuit eateries, I knew I needed to find a product to serve with my creamy pimento cheese, but I didn't want to serve store-bought chips. I had a problem to solve.
A few years and endless biscuits later, I came up with the idea of a "biscuit cracker". Here at Callie's Hot Little Biscuit, we never make biscuits past the second roll out of dough. We want every hot little biscuit you eat to be tender with a down-pillow-like texture. Once the dough reaches the third roll out, the glutens start to activate making for a tougher biscuit.
Rather than letting that precious dough go to waste, I rolled it THIN, poked holes in it, added sea salt... and there I had it: an Artisan Biscuit Cracker!
How to Make our Artisan Biscuit Crackers:
Whether you're making them "classic" with sea salt and pepper, savory with cheese and herbs, or sweet with cinnamon sugar, the process is the same. Never let leftover biscuit dough go to waste again! Instead, make artisan Callie's Hot Little Biscuit crackers.

These easy homemade biscuit crackers are a great way to repurpose leftover biscuit dough. They are delicious and super crunchy, and last forever. These crackers are perfect with dips, on a veggie platter, or when you want a crunchy midday snack!
Instructions:
Note: The number of crackers this recipe makes depends on how much leftover dough you're using.
- Preheat the oven to 350 degrees.
- Roll the dough to about 1/8-inch thickness using a rolling pin on a lightly floured surface.
- Slice the dough into rustic strips and transfer them to a rimmed baking sheet lined with parchment paper.
- Poke holes in the strips with a fork.
- Brush melted butter onto the strips and sprinkle with salt and pepper.
- Bake for 10 to 15 minutes, or until browned and crisp. Thinner strips crisp quickly, thicker strips will take more time.
- Let them cool, then store them in a sealed container.
