Green Goddess Dip

Ingredients

  • • 1 cup mayonnaise
  • • 1 small cucumber, peeled, seeded, and chopped
  • • 2 green onions, chopped
  • • 2 cups coarsely chopped mixed fresh herbs (chives, dill, flat-leaf parsley, cilantro)
  • • 3 or 4 small cloves garlic, coarsely chopped
  • • 2 teaspoons white wine vinegar
  • • ¾ to 1 teaspoon anchovy paste
  • • Juice of ½ lemon
  • • Salt and pepper, to taste
  • • Biscuit Crackers
  • • Crudités

A good dip just makes everything feel like summer, and this Green Goddess Dip has become a new favorite. It’s incredibly easy to throw together – just a quick blend and you’re done – but it tastes like you put in so much more effort. I love how the fresh herbs really shine here; the mix of chives, dill, parsley, and cilantro creates that bright, vibrant flavor that feels light, herby, and totally irresistible. It’s the kind of recipe I lean on when I need something quick but still want to impress.

One of my favorite things about this dip is how flexible it is. You can stick with the classic mayonnaise for that rich, creamy texture, or swap in Greek yogurt or even cottage cheese if you’re looking for a lighter, protein-packed option. It’s perfect as an easy appetizer or snack whether I’m packing it up for a beach day, bringing it along on a boat trip, or setting it out for a casual summer get-together. Paired with crunchy crackers and crisp veggies, it’s fresh, flavorful, and always the first thing to disappear.

Green Goddess Dip with Biscuit Crackers and Crudités

Instructions:

  1. Place the ingredients in a mini food processor or blender and puree.
  2. Taste and adjust salt and/or pepper if needed.
