Berry Jam Biscuit Crumble Bars

Ingredients

Dough
  • • 1 bag Callie's Hot Little Biscuit Buttermilk Biscuit Mix
  • • 6 Tbsp salted butter
  • • ¾–1 cup buttermilk
  • Filling
  • • 1 jar Callie's Blackberry Jam
  • • Crumble Topping
  • • 1 cup all-purpose flour
  • • ½ cup granulated sugar
  • • 1 stick (½ cup) salted butter, cold
  • • Melted butter, for greasing the baking dish
  • Summer break is coming to an end, and back-to-school season is right around the corner. I love making these Blackberry Jam Biscuit Crumble Bars because they're easy to bake ahead, cut into squares, and keep on hand for busy mornings or an after-school sweet treat. They're delicious at room temperature, but I especially love serving them warm with a fresh cup of coffee or a scoop of vanilla ice cream for dessert.

    Instructions

    1. Preheat the oven to 350°F.
    2. Lightly grease a ceramic baking dish with melted butter.
    3. Prepare the Buttermilk Biscuit Mix according to the package directions. Wrap or cover the dough and refrigerate for 10–15 minutes.
    4. While the dough chills, prepare the crumble topping. In a medium bowl, combine the flour, sugar, and cold butter. Use your fingertips until the mixture resembles coarse crumbs. Set aside.
    5. Remove the dough from the refrigerator and roll it out on a lightly floured surface until it's large enough to fit the bottom of your baking dish.
    6. Transfer the dough to the prepared baking dish and gently press it into the bottom.
    7. Spread an even layer of Callie's Blackberry Jam over the dough.
    8. Sprinkle the crumble topping evenly over the jam.
    9. Bake for 40 minutes, or until the topping is golden brown and the biscuit crust is cooked.
    10. Let cool before slicing into bars.
