Peach & Whipped Cottage Cheese Biscuit Toasts

Ingredients

  • •1 Box of Callie's Buttermilk Biscuits
  • •3 tablespoons cottage cheese
  • •1 teaspoon honey
  • •Zest of ½ lemon
  • •Splash of milk
  • •1 Tablespoon of Butter
  • •2 peaches, sliced
  • •2 handfuls fresh cherries, pitted and sliced
  • •2 handfuls pecans
  • •Pinch of flaky salt

If you're looking for an excuse to buy peaches at the farmers market, this is it! I love finding simple ways to make the most of fresh, seasonal ingredients, and these Peach & Whipped Cottage Cheese Biscuit Toasts are one of my favorite summer recipes. Sweet peaches, juicy cherries, toasted pecans, creamy whipped cottage cheese, and warm, buttery biscuits come together for a bite that's both beautiful and incredibly easy to make. Once blended with honey, lemon zest, and a splash of milk, the cottage cheese becomes silky smooth with a texture that's similar to whipped ricotta!

I love serving these for brunch because they're just as pretty as they are delicious. The warm peaches, creamy whipped ricotta, and toasted pecans bring the perfect balance of sweet and salty, while the fresh cherries add a bright pop of color that guests always remember.

Instructions 

  1. Bake the frozen Callie's Buttermilk Biscuits according to the package directions. While they're baking, prepare the toppings.
  2. Place the pecans in a small cast-iron skillet and transfer to the oven while the biscuits bake. Toast for 5–7 minutes. Let cool slightly, then chop.
  3. Make the whipped ricotta topping. Add the cottage cheese, honey, lemon zest, and a splash of milk to a blender. Blend until smooth and creamy.
  4. Slice the peaches and cherries while biscuits finish baking.
  5. Melt a pat of butter in a skillet over medium heat. Add the sliced peaches and drizzle with honey. Cook for 4–6 minutes, stirring occasionally, until the peaches are softened and lightly caramelized.
  6. Slice the warm biscuits in half and spread each with the whipped ricotta. Top with the warm peaches, fresh cherries, and toasted chopped pecans.
  7. Sprinkle with a pinch of flaky salt and drizzle with a little more honey before serving.
