Sausage, Pimento Cheese, & Pickle Crackers

Ingredients
- • 1-2 bags of Sea Salt Biscuit Crackers
- • 12 oz container of Traditional or Fiery Pimento Cheese
- • A jar of pickle slices or chips, variety of choice
- • 6-8 slices of swiss cheese, cut into quarters
- • 8-10 oz sliced smoked sausage or pepperoni
- • Italian seasoning, optional
Back when my three kids were little, afternoons had a way of turning into a blur of backpacks, permission slips, and the familiar chorus of “Mom, I’m starving!” after school. I learned quickly that having a few easy snack ideas in my back pocket made those busy days feel a little more manageable. Now, while my girls are grown and two are out of the house, these Sausage, Pimento Cheese, & Pickle Crackers would have been one of those simple little lifesavers in our kitchen. They’re quick to assemble, full of bold flavor, and just the kind of easy after school snack that kept everyone happy while homework and dinner prep were still ahead.
And even though my girls are grown and able to make their snacks (thank goodness!), I still find myself making this recipe all the time. It’s one of my favorite last-minute hosting appetizers because it looks a little special but takes hardly any effort at all. With salty crackers, creamy pimento cheese, tangy pickles, and savory sausage baked together into a warm, melty bite, it’s proof that the best recipes are often the simplest ones. Whether you’re feeding hungry kids or welcoming friends at the door, this is one of those simple but delicious recipes you’ll find yourself making again and again.

Instructions:

Preheat the oven to 350ºF. Line a baking sheet with parchment paper.

Lay out crackers about an inch or two apart, filling the sheet with as many as desired. Be sure not to overcrowd the pan.

Scoop the pimento cheese into a Ziploc or pastry bag. Cut the end off the tip of the bag and pipe a small dollop on the center of each biscuit cracker. (If you don’t have bags, you can add your dollops using two spoons!)

After piping the pimento cheese, top each cracker with any combination of the listed toppings. When making mine, I made a variety of crackers with a pickle slice and a slice of cheese, and also made some that layered a pickle, a slice of smoked sausage or pepperoni, and the final layer of swiss cheese. Each cracker was sprinkled with a pinch of Italian seasoning, but this step is optional.

Then, bake the crackers for about 10-12 minutes or until the cheese is melted and browning. Allow to cool slightly before serving and enjoy!
