Spicy Crispy Cheese & Olive Crackers

- • 1-2 bags of Sea Salt Biscuit Crackers
- • 2 cups shredded parmesan cheese
- • 10 oz chopped Castelvetrano olives
- • 1 tbsp harissa
- • Salt and pepper, to taste
Like everyone else, I love a good scroll on Instagram reels. And with the nature of my career, a lot of that content brings me delicious inspiration for new recipes. One recent favorite of mine was three-ingredient cheese and olive crackers – it was so simple but looked so appetizing. Cheese, olives, and a savory snack? That is really speaking my language.
Thanks to that inspiration, I whipped up my own version of the simple (but oh so tasty) appetizer featuring an extra crunch factor with our crispy, butter biscuit crackers. The layer of added texture truly takes this bite over the top.
This recipe only uses a handful of ingredients, but the flavors pack a punch. I started with shredding fresh parmesan cheese (Fun fact: hand-shredding helps the melting of the cheese since pre-shredded cheese comes dusted with a coating to prevent it from sticking together.) and chopping up one of my favorite varieties of olives: Castelvetrano. I have witnessed olive haters become olive lovers from taste-testing these little green gems. The flavor is salty, briny and perfectly balanced with the bite that you get from the texture. And they’re a great size for martini olives (stuffed with blue cheese, of course!). After mixing those two ingredients together with a dollop of harissa for spice, I spread that mixture evenly over my baking sheet and added the last piece of this insanely simple and delicious appetizer, Sea Salt Biscuit Crackers. Bake all of that together until golden brown and you have your new favorite snack!

Instructions
- Preheat the oven to 350ºF. Line a baking sheet with parchment paper.
- In a large mixing bowl, add shredded cheese, chopped olives, harissa, and salt and pepper. Mix together until everything is well incorporated.
- Add the cheese and olive mixture to your lined baking sheet. Spread into an even layer. On top of the mixture, lay a single layer of biscuit crackers to cover the surface.
- Bake for 20-25 minutes or until the cheese is golden brown and crispy. Allow to cool slightly before cutting into smaller pieces. Enjoy!
