Savory S'mores
From Carrie Morey's Hot Little Suppers cookbook
Ingredients
- • 1 bag of Sea Salt Biscuit Crackers
- • Selection of charcuterie (prosciutto, salami, pepperoni)
- • 2 bags of mini wheels of brie cheese
- • Carolina Honey
- • Fresh fruit and additional accoutrements
I’ve never had much of a sweet tooth, so while everyone else is dreaming about chocolate and marshmallows by the fire, I’m over here plotting something savory. That’s how these Savory S’mores were born: crispy sea salt biscuit crackers, melty brie, and perfectly warm, salty charcuterie all stacked into one ridiculously satisfying bite. They’ve got all the nostalgia of a classic campfire treat, but with a grown-up, savory twist that my fellow non-sweet-tooth friends will absolutely appreciate.
I love making these for an easy but fun date night or a cozy girls’ night in. There’s something about roasting mini wheels of brie over an open flame (or even a fire pit!) that feels interactive and special without being complicated. Layered with prosciutto, salami, or pepperoni, finished with a drizzle of Carolina honey and fresh fruit, these savory s’mores turn simple ingredients into a total experience. They’re playful, a little indulgent, and completely customizable. Basically everything I want in a low-effort, high-impact snack board moment.

Instructions:
- Skewer a mini wheel of brie cheese onto your roasting skewer or stick. Slowly roast over the open fire until the inside of the cheese gets melty, about 5 minutes or more depending on how large and hot the fire is burning. Optionally, after a couple of minutes of the cheese roasting, add your choice of meat to the skewer to warm and crisp.
- To build a savory s’more, take two biscuit crackers, add meat of your choice (roasted or not) then sandwich the brie between the two crackers and slide off of the skewer.
- Add a drizzle of honey or your other favorite accoutrements for charcuterie, and enjoy! Have fun with date night or girls’ night with this easy, fun recipe!
