Pack the Perfect Bite: 3 Super Sandwiches for the Beach

Nothing beats enjoying a delicious sandwich on the beach, surrounded by family and friends. As the Lowcountry heats up for summer, it’s essential to stay stocked with amazing food that’s fresh, easy to pack, and absolutely satisfying. That’s why I’m sharing three of my go-to biscuit sandwiches! 

Whether you’re craving the refreshing brightness of dill and cucumber, the classic comfort of a BLT, or the creamy, iconic Lowcountry flavor of pimento cheese, these sandwiches—made with our delicious handmade biscuits—have got you covered. 

Getting the family or friends out to the beach can sometimes be a hassle, which is why these sandwiches are the perfect lunch option for a variety of tastes and preferences. Whether you’re feeding picky eaters, adventurous food lovers, or anyone in between, these biscuit sammies offer something delicious for everyone to enjoy — no fuss, no mess, just great flavor. Light, portable, and easy to assemble, these sammies are designed to keep you energized and satisfied — so you can focus on soaking up the sun and making memories. Grab your cooler, pack up these scrumptious sandwiches, and get ready for a true taste of Lowcountry summer at its best.

Dill-ilicious Cucumber Sandwiches

Ingredients 

  • 1 cup mayonnaise

  • 1 cup sour cream

  • ½ cup finely minced dill

  • ¼ cup finely minced fresh mint

  • 2 cloves garlic, minced

  • ¼ tsp kosher salt

  • ⅛ tsp freshly ground black pepper

  • 3-4 Persian cucumbers

  • Sharp Cheddar Biscuits

Instructions 

  • Reheat biscuits according to package instructions.

  • In a medium-sized mixing bowl, combine mayonnaise, sour cream, dill, mint, garlic, and salt & pepper. Mix until well combined.

  • Optionally, peel cucumbers before slicing into small coins.

  • Split biscuits in half, add a dollop of dill-licious dip and a few slices of cucumber. Top with remaining biscuit half.

Dill-ilicious Cucumber Sandwiches

BLTs

Ingredients 

  • ½ - 1lb bacon

  • 3 Roma tomatoes

  • Butter lettuce

  • Genuine Ranch Chipotle Ranch

  • Buttermilk Biscuits

Instructions 

  • Reheat biscuits according to package instructions.

  • Cook bacon until crispy, or until preferred texture.

  • Peel Roma tomatoes and slice into about ¼” thick. Save to the side for building sandwiches. Tear or chop butter lettuce into small pieces fit to the biscuit.

  • To assemble, split biscuits in half. Add Genuine Ranch Chipotle Ranch to both halves, then add two tomato slices to bottom half, then top with bacon slices. Stick lettuce to the top half of the biscuit, then sandwich together.

BLTs

Pimento Cheese Sandwiches 

Ingredients 

  • 12 oz Pimento Cheese

  • Cheese & Chive Biscuits

Instructions 

  • Reheat biscuits according to package instructions.

  • Split biscuits in half and add a generous amount of pimento cheese to each before topping with the other biscuit half.

Wrap up the sandwiches in parchment paper, add to a container or Ziploc bag, and pack in your beach cooler to enjoy for an oceanside lunch!
