Cheesy, Garlic Biscuits

Ingredients

  • • 2 bags of Buttermilk Biscuit Mix
  • • 10 tbsp butter, divided
  • • 1 to 1 ½ cup buttermilk
  • • 3 - 5 tbsp Italian seasoning
  • • 16 oz mozzarella pearls
  • • ½ cup Parmesan cheese, grated

Is there anything better than an ooey, gooey cheese pull? I would say yes, but only if that cheese pull is from one of my Cheesy, Garlic Biscuits! These savory biscuit bites are the perfect blend of classic garlic bread with pops of mozzarella pearls and the buttery tenderness of our classic biscuit recipe.

These are the ideal addition to your next pasta dinner or would even pair perfectly with your favorite winter soup recipe or fall chili for the tailgate. I am a truly savory-loving person, so I added about 5 tbsp of Italian seasoning to my biscuit dough, but if you want to keep things a bit more milder, opt for about 3 tablespoons. I love to mix up my own seasoning blends, and my Italian seasoning is not different. For this mix, I have included garlic powder, red pepper flakes, dried rosemary, dried oregano, salt, and more. Level up your garlic-bread-game with these delicious biscuits!

Instructions:

  1. Preheat the oven to 400ºF. Line a rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, add the bags of biscuit mix, reserving ½-1 cup for dusting.
  3. Add 8 tbsp of butter in a snapping motion with your fingers. Once your mix is the consistency of grated Parmesan cheese, add in your Italian seasoning (3-4 tbsp depending on spice preference) and ½ cup Parmesan cheese. Mix to incorporate.
  4. Make a well in your flour mixture and add in the buttermilk. Gently mix with your hands, combining until the dough is wet and sticky. Be careful not to overwork the dough. If more liquid is needed to absorb the flour, add additional buttermilk a small amount at a time.
  5. Once buttermilk is mixed into the flour and dough is created, add the mozzarella pearls and fold in gently.
  6. Liberally dust the dough, rolling surface, rolling pin, and cutter with the remaining mix. Flip the dough onto a dusted surface. Roll the dough using a rolling pin until it is 2 inches thick.
  7. As you cut the biscuits, place them on a parchment-lined, rimmed baking sheet. The biscuits should touch. Bring the remaining dough back together into a mound. Roll, cut, and place the biscuits in the same manner.
  8. Melt the rest of the butter and mix in 1-2 tbsp of Italian seasoning, depending on spice preference. Brush some of the Italian seasoning butter on top of each biscuit.
  9. Bake for 16-18 minutes, rotating the pan halfway through.
  10. Once biscuits are out of the oven, allow them to cool slightly before serving. Enjoy!
