Cherry Shortcake Biscuits

Ingredients
- • 1 Callie's Hot Little Biscuit Shortcake Mix
- • 8 oz butter
- • 1/2 cup sugar
- • 1 cup whole milk with a splash of vanilla
- • 2 cups of frozen cherries with
- • 1/2 cup sugar
- • 1/2 cup water
- • 2 tablespoons of cornstarch
- • Zest and juice of a lemon
- • A pinch of cinnamon
- • 3 tablespoons of powdered sugar
- • Splash of vanilla
- • Splash of milk
Sweet, juicy cherries + flaky, buttery shortcake biscuits make for an easy but impressive dessert for your next dinner party, girls' night, or weekend brunch! Bake up these biscuits in under 30 minutes and top them with the jammy, sweet cherry reduction and a drizzle of vanilla icing for an extra kick of sweetness.
I don't know about y'all, but I have been seeing cherries everywhere! From fashion and beauty to cooking and baking, it seems that cherries are really having their moment. These tart pops of flavor can be so versatile, and I wanted to try my hand at combining cherries with some of our beloved biscuits - and these Cherry Shortcake Biscuits were born!
Instructions:
- Follow the instructions on the back of the shortcake mix for the biscuits to incorporate the milk, butter, and sugar and fully bake the biscuits.
- Combine ingredients for cherry topping into a medium saucepan: 2 cups of frozen cherries, 1/2 cup sugar, 1/2 cup water, 2 tablespoons of cornstarch, zest and juice of a lemon, and a pinch of cinnamon. Heat over a medium low heat until the cherries reduce and a syrupy liquid is created.
- Combine ingredients for the glaze in a small mixing bowl: 3 tablespoons of powdered sugar, a splash of vanilla, and a splash of milk. Add splashes of milk until desired consistency is reached.
