Y’all know we love a savory biscuit, but sometimes you’ve gotta turn it into dessert! These Glazed Peach Fritters are the perfect sweet treat when you’ve got fresh peaches on hand and want to make something a little extra special. Made with our Shortcake Biscuit Mix, sweet yellow peaches, and finished with a sweet peach glaze, these fritters are sweet and crispy on the outside, tart and soft on the inside, and downright delicious. They’re perfect for brunch, a gathering, or whenever you’re craving a sweet treat. Trust me, y’all are gonna want to make a whole batch!
Instructions:
- Dice the peaches into small pieces.
- Melt the butter in a pan over medium heat.
- Add the diced peaches to the melted butter and toss to coat.
- Sprinkle the brown sugar, cinnamon, and salt over the peaches.
- Add the zest and juice of one lemon, then sauté the peaches until they are caramelized.
- Strain the peaches, making sure to save the juices. Set the caramelized peaches and reserved juices aside.
- Prepare the Shortcake Mix according to the package directions.
- Gently fold the strained caramelized peaches into the prepared shortcake dough.
- While the oil is heating, prepare the glaze. Whisk together the powdered sugar and peach juice, then slowly drizzle in milk until you reach your preferred glaze consistency.
- Heat the vegetable oil in a pan to 325°F.
- Lightly flour a ¼-cup measuring cup to prevent the dough from sticking. Scoop the batter into the measuring cup and carefully drop it into the oil at low to medium heat.
- Use the back of the measuring cup to gently flatten the fritter so it cooks evenly.
- Let the fritter cook until the outside is crispy and golden and the fritter moves easily in the oil.
- Carefully flip the fritter and continue cooking until both sides are golden brown and crispy.
- Transfer the finished fritters to a warm oven while you finish cooking the remaining batter.
- Once all the fritters are finished, dip both sides into the peach glaze.
- Place the glazed fritters on a drying rack and allow the glaze to set.
- Serve warm and enjoy!
