Tomato & Boursin Cheese Biscuit Tart

From Carrie Morey's Hot Little Suppers cookbook

Ingredients

  • • 1 bag Callie’s Buttermilk Biscuit Mix
  • • 5 oz Boursin cheese
  • • 2 medium tomatoes
  • • ¾–1 cup buttermilk
  • • 6 tablespoons salt
  • • Flour, for rolling
  • • Salt, to taste
  • • Pepper, to taste
  • If you’re looking for a simple little recipe that tastes like it took all day, this Tomato & Boursin Cheese Biscuit Tart is just the thing. With buttery biscuit dough, juicy summer tomatoes, and creamy Boursin cheese, it’s the kind of Southern-inspired bite you’ll want to make for Sunday brunch, a porch get-together, or when you’ve got lots of fresh tomatoes to spare from the garden. It’s easy, comforting, and best served warm straight from the oven!

    Instructions:

    1. Preheat the oven according to the biscuit dough package directions.
    2. Prepare the biscuit dough by combining the biscuit mix with the salted butter and ¾ cup buttermilk. Add additional buttermilk as needed until a soft dough forms.
    3. Peel the tomatoes and slice them into 10 even slices.
    4. Slice the Boursin cheese into 10 pieces.
    5. Lightly flour a sheet of parchment paper and roll the biscuit dough out evenly.
    6. Transfer the rolled-out dough, still on the parchment paper, to a baking tray.
    7. Cut the dough into 10 pieces.
    8. Place one piece of Boursin cheese and one slice of tomato onto each piece of biscuit dough.
    9. Season each tart with salt and pepper to taste.
    10. Bake according to the biscuit dough package directions, or until the biscuit dough is golden brown and cooked through.
    11. Let the tarts cool slightly before serving and enjoy!
