Kentucky Hot Brown Biscuit Sandwiches

Ingredients
- • 12 Buttermilk Biscuits
- • 1 lb of thick cut bacon
- • 1 lb of thick cut turkey
- • 12 oz Callie's Hot Little Biscuit Pimento Cheese
- • Country gravy of choice
The Kentucky Derby spans over the course of a century and a half and boasts some of the most memorable events in sporting history– and has one of the most recognizable venues and traditions. Churchill Downs, the world's most legendary racetrack, has conducted thoroughbred racing and presented America's greatest race, the Kentucky Derby, continuously since 1875.
And at the iconic venue, there are delicious traditions like a Mint Julep, Pimento Cheese Tea Sandwiches, Fried Chicken, and of course, a Kentucky Hot Brown.
Typically served as an open-faced sandwich, I've turned this into my version of a Kentucky Hot Brown. Call it a Charleston Hot Brown or a Callie's Hot Brown! Built on a fluffy buttermilk biscuit, and topped with thick cut turkey, melty pimento cheese, crispy bacon -- all drizzled with rich gravy. This is certainly a decadent derby dish, but serve it alongside some fresh, tart Briny Hounds and you'll have Charleston's version of the derby!
Instructions
- Fry up the bacon to your desired crispness - I love mine extra crispy. Allow the bacon to cool.
- Split your baked Buttermilk Biscuits with a fork to create the base for your sandwich.
- Begin with layering the sliced turkey, then add a generous spoonful of pimento cheese.
- Pop the bottoms of the hot browns onto a parchment lined baking sheet and broil until pimento cheese is melty.
- Once removed from the oven, add the slices of bacon on top.
- Add the biscuit tops and spoon the country gravy of your choice over the top. (I used my recipe for sausage gravy that is a huge favorite at our eateries!) Enjoy!
