Mini Meatball Subs

Ingredients
- 12 Sharp Cheddar Biscuits
- 12 pre- or handmade meatballs, cooked
- Marinara sauce
- Mozzarella cheese, sliced thin
Have you ever craved a meatball sub but didn’t want the full sandwich, especially when you’re hosting or sharing with a crowd? That’s exactly how this recipe came to life. I wanted all the cozy, saucy goodness of a classic meatball sub, just in a smaller, more shareable form.
These mini meatball subs are made with our sharp cheddar biscuits, and y’all they’re such a fun twist on a familiar favorite. Warm biscuits, saucy meatballs, melty cheese, everything you love, just bite sized. They’re perfect for game days, gatherings, or anytime you want an easy appetizer that feels a little extra special and guaranteed to disappear fast.

Preheat your oven to 400ºF. Thaw biscuits from frozen. Once thawed, slice in half and separate the top and bottom halves. There is no need to separate each biscuit, it’s easier to work with the slabs!

On the bottom half of the sliced biscuits, spoon and spread a generous amount of marinara sauce. Then, place one meatball on each biscuit. Top with more marinara sauce and sliced mozzarella.

Next, place the top halves on the biscuits over the meatballs. Transfer the sandwiches to a parchment lined baking sheet. Bake for about 15-20 minutes or until the biscuits are warmed through and golden brown. Optionally, brush the tops of the sandwiches with melted butter and season with garlic powder, Italian seasoning, and parmesan cheese.
