Pumpkin & Chai Cobbler

Ingredients

  • • 12 Pumpkin Spice Biscuits
  • • 15 oz puréed pumpkin
  • • 14 oz sweetened condensed milk
  • • 1/2 cup self-rising flour
  • • 2 teaspoons chai spice
  • • 1/2 teaspoon salt

Admittedly, I am not the biggest fan of pumpkin flavor. It's so quintessentially fall, and the way it has become such a favorite across markets from coffee to candles is so fascinating to me, so I knew that I wanted to try my hand at creating something in the pumpkin spice realm. From that came our delicious, fan-favorite Pumpkin Spice biscuits. Since their launch a couple of years ago, we sell out each year without fail!

These down-pillow, fluffy, spiced biscuits are a spin on a fall favorite, made with real pumpkin and notes of cinnamon, nutmeg, and brown sugar and paired with a vanilla icing packet. Even to me, a pumpkin skeptic, these are so incredibly delicious and transport you right into the autumnal vibes!

Pumpkin & Chai Cobbler

This year, I wanted to take the pumpkin experimenting even further and develop a recipe using these fall-star biscuits. I was looking for the perfect dessert - one that brings on the warm, comfort, and richness that are invoked by the classic pumpkin flavor. And from that, I created this Pumpkin & Chai Cobbler!

An alternative to the traditional pumpkin pie, this dish is decadent with a cut of spice that pairs perfectly with cool vanilla ice cream or a warm cup of coffee. It becomes almost bread-pudding-like, with the silky texture of the cobbler mixture and the bite of fluffy, tender pumpkin spice biscuits. This dessert is a fantastic option to bake up for your fall celebrations from Halloween to Thanksgiving.

Pumpkin & Chai Cobbler with Vanilla Ice Cream

Instructions

  1. Preheat oven to 350ºF.
  2. In a medium bowl, mix together pureed pumpkin, sweetened condensed milk, self-rising flour, chai spice, and salt.
  3. Once all combined, pour the cobbler mixture into a butter baking dish.
  4. Top with frozen Pumpkin Spice biscuits and cover dish with foil.
  5. Bake for 30 minutes.
  6. Remove foil and continue to bake for an additional 10 minutes.
  7. Top the biscuits with included whipped vanilla icing packets. Optionally, serve with ice cream. Enjoy!

To make your own homemade chai spice, combine the following: 3 tablespoons ground cinnamon, 1 tablespoon ground cardamom, 1 tablespoon ground ginger, ½ tablespoon ground allspice, ½ tablespoon ground cloves, and ½ tablespoon ground nutmeg.
