Tomato Pimento Cheese Biscuit Toast

From Carrie Morey's Hot Little Suppers cookbook

Ingredients

  • • 1 box Callie’s Hot Little Biscuit Buttermilk Biscuits
  • • 12 oz Callie’s Hot Little Biscuit Pimento Cheese
  • • 1 medium-sized tomato
  • • Ground black pepper, to taste
  • • Flaky Salt, for garnish
  • Now y’all know we love a good biscuit, but sometimes you’ve gotta dress her up a little! This Tomato Pimento Cheese Biscuit Toast is one of my favorite easy recipes you can whip up when the family is hungry and you want something that feels a little special without making a big fuss. Made with buttery buttermilk biscuits, creamy pimento cheese, and juicy fresh tomatoes, it’s a quick and simple recipe you can throw together when you want something warm, comforting, and full of flavor. It’s Southern comfort food at its easiest and trust me, you’re gonna want to make enough for seconds!

    Instructions:

    1. Thaw the biscuits according to the package directions.
    2. Once thawed, slice the 6 biscuits in half horizontally to create two 6 biscuit halves.
    3. Place the biscuit halves uncovered in the oven for 15–20 minutes, or until they become golden and crunchy on the outside.
    4. While the biscuits are baking, peel and thinly slice the tomato.
    5. Remove the biscuits from the oven and spread a generous layer of pimento cheese over each biscuit half.
    6. Return the biscuits to the oven and bake for another 5 minutes.
    7. Switch the oven to broil and broil for 1–2 minutes, watching closely, until the pimento cheese is warm and bubbly.
    8. Remove from the oven and top each biscuit with slices of fresh tomato.
    9. Sprinkle ground black pepper to taste and garnish with flaky salt.
    10. Slice, serve warm, and enjoy!
