Red, White, and Biscuits: Strawberry & Blueberry Butter Swim Biscuits

Ingredients

  • • 4 cups self-rising flour or 2 Bags of Shortcake Mix
  • • 1 cup white sugar
  • • 4 cups of any fruit, washed and chopped (We used strawberries and blueberries)
  • • 1 ½ cups whole milk
  • • 2 tbsp vanilla
  • • 16 oz butter
  • • Ice cream, optional for serving
  • • Glaze, optional for serving (See below)

As the Fourth of July approaches, we find ourselves craving flavors that feel festive, fresh, and just a little nostalgic. Strawberry & Blueberry Butter Swim Biscuits

Instructions:

  1. Preheat oven to 400ºF.
  2. In a large glass baking dish, add in the butter. Place in the heated oven to melt.
  3. While butter is melting, add the vanilla to the milk. Then, in a large bowl, mix together flour (or Shortcake Mix), sugar, and vanilla milk. Combine together into a loose dough, then add chopped fruit(s) of choice. Incorporate altogether until a wet, tacky dough consistency is reached.
  4. Once butter is melted, remove the glass pan from the oven and carefully add in the dough mixture to the baking pan. Spread as evenly as possible across the pan. Replace the pan into the oven and bake for 30-35 minutes, or until golden brown and a toothpick comes out clean from the center of the bake.
  5. If preparing the glaze, use scraps from your fruits (in this case, we used the tops of our strawberries) to create a flavor syrup. Combine the fruit scraps with water and sugar, then heat over low temperature on the stove until sugar has melted. Strain the syrup from the fruit into a small container.
  6. To make the glaze, add ½ to 1 cup of powdered sugar to a bowl. Slowly add in the fruit syrup while whisking until a liquidy, opaque glaze is formed.
  7. Once biscuits are fully baked, allow to cool slightly before drizzling glaze over the top. Serve alongside whipped cream, ice cream, or completely on their own! And, of course, enjoy!

Glaze Ingredients:

  • 1/2 to 1 cup powdered sugar
  • 1/2 cup water
  • 1/2 cup white sugar
  • Fruit scraps (optional)
