The biscuit that started it all!

Callie created these chopped country ham biscuits for a very specific reason. Guests often experienced the ham falling out when they took a bite at her catered parties. No one wants to be dressed in cocktail attire with a piece of ham hanging out of their mouth! So Callie made them distinctively different by finely chopping the ham in each handmade sandwich.

Since 2005, we continue to make our country ham biscuits the Callie way. We use finely chopped artisanal Virginia country ham and house-whipped Dijon mustard butter, tucked inside our signature sharp cheddar biscuit. They truly make for the most perfect cocktail hours d'oeuvre that one can eat in a lady-like manner!

How to Enjoy

For Buttermilk, Cheese & Chive, Sharp Cheddar, Country Ham, and Limited Edition Biscuits: Preheat oven to 400ºF. Wrap the biscuits in foil and bake for 20-25 minutes. Uncover and bake for 5 additional minutes.

How long do the biscuits last?

Fridge: Up to a week! Freezer: 18 months! As long as they are sealed either in our vacuum bag or your own resealable bag.

How do I reheat the biscuits?

For Buttermilk, Cheese & Chive, Sharp Cheddar, Country Ham, and Limited Edition Biscuits: Preheat oven to 400ºF. Wrap the biscuits in foil and bake for 20-25 minutes. Uncover and bake for 5 additional minutes.

For Cinnamon and Iced Blueberry: Preheat oven to 350ºF. Wrap the biscuits in foil and bake for 20-25 minutes. Uncover and bake for an additional 5 minutes.

For Sausage Biscuits: Preheat oven to 400ºF. Wrap the biscuits in foil and bake for 25-30 minutes. Uncover and bake for an additional 5 minutes.

For Gluten-Free uButtermilk Biscuits: Preheat oven to 400ºF. Wrap the biscuits in foil and bake for 30-35 minutes. Uncover and bake for an additional 5 minutes.

How do I store my biscuits?

For fully-baked and frozen biscuits: Store them in the freezer in their vacuum-sealed packaging for up to 18 months. Sealed biscuits will also last for a week if storing in the refrigerator.

For biscuits made from our mixes: Store freshly-baked biscuits by placing them in a sealed plastic bag. Keep biscuits in the fridge for up to a week; store in the freezer for up to 18 months if properly sealed. Follow reheating instructions once ready to eat.

Can you freeze buttermilk biscuits?

Yes. After baking the biscuits, let them sit on a wire rack until they are completely cool. Wrap each biscuit tightly in foil or freezer wrap. Place the wrapped biscuits in an airtight container or freezer bag and place them in the freezer. The biscuits will generally last up to three months.

How do I store biscuits to keep them fresh?

Store freshly baked biscuits at room temperature by covering them with foil or cling film or placing them in a sealed plastic bag. They can stay this way at room temperature for one or two days. You can also keep them in the refrigerator for about a week if you store them sealed the same way.

How long do I cook biscuits?

Biscuit mixes from Callie's Hot Little Biscuit let you bake up delicious Southern biscuits in just 16 to 18 minutes at 400 degrees Fahrenheit. Our pre-made Buttermilk Biscuits reheat from frozen in just 25 to 30 minutes when baked in the over at 400 degrees Fahrenheit, or in just 10 to 15 minutes when thawed. What do I do when my order arrives?

A hand-packed box of biscuits will arrive on your doorstep fully baked, and ready to be reheated or placed in the freezer. Please note, your perishable order will arrive cool to the touch and not necessarily frozen. Our biscuits are fully baked before we freeze them, so they will not spoil. You can re-freeze the biscuits and cookies. Promptly put pimento cheese in the refrigerator upon arrival.
