Elvis Biscuit

Ingredients
- • 12 Buttermilk Biscuits
- • 1lb bacon
- • 3 ripe bananas
- • 1/2 cup of peanut butter
The iconic sandwich of the king of rock and roll is one of the more polarizing dishes...Peanut butter, bacon, and bananas. All of those are delicious on their own, and many are hesitant to combine them, but thanks to Mr. Presley, we have been gifted a treat that is perfectly sweet and savory!
Of course, with great recipes comes great stories. And as this story goes, after a 1976 concert, Elvis and his bodyguards ventured to Colorado Mine Company restaurant for a late-night bite. There, he ordered a Fool's Gold Loaf—a sandwich made with a loaf of sourdough bread, a pound of bacon, a jar of peanut butter, and a jar of jelly.
Fast forward and born out of this story was a simpler version that the King (and you) could whip up at home -- the peanut butter, banana, and bacon combination. Years later, this famous snack has been coined 'The Elvis' and is on menus all across the country. And this is the hot little biscuit version!
Instructions
- Preheat oven to 350º.
- According to the package instructions, either bake our handmade Buttermilk Biscuits or make your own using our Buttermilk Biscuit Mix and recipe.
- In a skillet, fry your bacon to your taste. (To me, the crispier the better!)
- Slice bananas into coins and set aside.
- To assemble, take freshly baked biscuits and split in the middle using a fork. Layer bananas slices on the bottom half. On the top half of the biscuit, spread a generous amount of your favorite peanut butter. Stack two slices of bacon in an X-shape over the bananas. Sandwich the biscuits halves together, and enjoy!
