The biscuit that started it all!
Callie created these chopped country ham biscuits for a very specific reason. Guests often experienced the ham falling out when they took a bite at her catered parties. No one wants to be dressed in cocktail attire with a piece of ham hanging out of their mouth! So Callie made them distinctively different by finely chopping the ham in each handmade sandwich.
Since 2005, we continue to make our country ham biscuits the Callie way. We use finely chopped artisanal Virginia country ham and house-whipped Dijon mustard butter, tucked inside our signature sharp cheddar biscuit. They truly make for the most perfect cocktail hours d'oeuvre that one can eat in a lady-like manner!

- Preheat your oven to 400 degrees for savory biscuits (buttermilk, cheese & chive, sharp cheddar, ham, sausage) or 350 degrees for sweet biscuits (cinnamon, iced blueberry).
- Remove biscuits from plastic wrap and wrap in aluminum foil.
- Bake approximately 20-25 minutes – oven times may vary.
- Open the foil so the biscuit tops are exposed. Bake for five more minutes until golden brown.
